Paola High School chefs are putting their culinary skills to the test this week and next during competitions in the Wichita area. The students are split into three teams, with the first group set to continue a competition today that began Tuesday in Wichita. Andres said the students must prepare an entire menu, including an appetizer, entree, vegetable and dessert. They are judged on everything from preparation to cooking techniques to presentation. Some team members also will participate in the edible centerpiece individual event. On Feb. 26, team members will travel south of Wichita to Haysville, where students who are members of Family Career and Community Leaders of America will compete in another culinary competition. Unlike the Wichita competition, where the students can’t use anything electrical and only have a couple tables and two butane burners provided to them, chefs will have equipment from a commercial kitchen at their disposal during the FCCLA competition, Andres said. Andres’ students have received on-the-job experience at The BBQ Shack, Pizza Hut, Emery’s Steakhouse, Applebee’s and other restaurants throughout Paola. They also have handled some catering, including serving more than 100 people at a recent legislative dinner. She said she has seen a pretty even split between boys and girls participating in the culinary program since it began at the high school three years ago.
